It’s hearty warming vegan and practically fat free but by no means is it bland!
ingredients: 3 red peppers roasted with skins peeled off, 2 sweet potatoes peeled and diced, pepper, 600ml vegan stock, 1tsp paprika, pinch of cayenne (optional).
Put all the ingredients in a pan and leave to simmer until the sweet potato is soft. Blend with a stick blender (carefully) for a good 5 minutes to ensure its smooth. Serve hot.
